CAJUN CHICKEN SANDWICH and STEAK FRIES INGREDIENTS
2 Chicken Breast.
4 oz. Extra Virgin Olive Oil.
1 Spanish or Yellow Onion.
2 Limes.
Canola Oil. (Enough to submerge fries in the pan)
1 Tomato.
Lettuce of your choice
Mayonnaise
Bread of your choice
3-4 Baking Potatoes
Cajun Seasoning (Perfect Pinch Cajun)
Mixed Italian Herbs (Perfect Pinch Italian)
Sea Salt
CAJUN CHICKEN SANDWICH and STEAK FRIES COOKING INSTRUCTIONS
Start by washing potatoes and keeping the skin on. Make sure you dry them and cut them into steak size fries.
Add enough Canola Oil in a saute pan to assure that the potatoes are submerged in the oil and put heat on about 75%.
Cut one onion in half, peel and discard skin and place 2 onion halves into the oil, this will flavor the oil, let you know when the oil is hot enough to add the potatoes and the onion with break off into flower petals that you will remove as they brown and place on the side for the sandwich.
With the onion cooking in the oil, you will add the steak fries, turn the heat all the way up and make sure they are completely submerged in the oil, do not crowd the pan, and give the fries a good stir and a follow-up stir every few minutes. Remove as they brown and place on a rack or sheet tray with paper towels to absorb oil and season with some sea salt.
While the fries are cooking you can trim and clean the chicken breast and cut them into 3 or 4 pieces, and place them into a plastic bag or cover with plastic wrap, and with a mallet gently tenderize the chicken breast. Place them in a bowl and add 1 fresh squeezed lime juice and 3 oz. extra virgin olive oil.
In a bowl add 2 parts Cajun Seasoning and 1 part Italian Seasoning and mix together.
Layout marinated chicken medallions on a plate and sprinkle your desired amount of cajun seasoning on both sides.
Place cast iron pan on the stove and on the highest flame until it starts to smoke (beware of smoke alarms) and add some extra virgin olive oil and cook the chicken for about 2 to 2 ½ minutes on each side. The chicken should be on the thinner side and will cook fast.
Make Cilantro Lime Mayo by adding 4 oz of Mayo, 1 tbsp chopped cilantro and ½ fresh squeezed lime juice, and a pinch of cajun seasoning and mix.
Make your sandwich… Coat top of the bread with Mayo, place chicken on bread with lettuce, tomato, and onion, and the fries on the plate, and eat.
