Chick or Vegetable Stock 1 cup Heavy Cream 1 lb. Block Sharp Cheddar Cheese (Shredded) ½ cup Pecorino Romano Cheese (Grated) 4 oz. Butter 1 cup chopped Onion ½ Cup Shredded or Chopped Carrots 4 oz. Flour 2 Cloves Garlic (Chopped) 1 tsp Paprika or Smoked Paprika Salt and Black Pepper to taste CREAMY BROCCOLI & CHEDDAR SOUP INSTRUCTIONS Start by cutting and prepping your vegetables, onions, Garlic, Broccoli, Carrots. Place butter, onions, and carrots in a 4-quart stockpot season with Salt & Pepper, and cook for 4-5 minutes on medium heat until the onions start to get soft and they are transparent. Add 4 oz. of flour, stir and cook for 2 minutes. Add 2 quarts of chicken stock and whisk soup while adding the stock. Cook for 10 minutes on high heat. Check the thickness of the soup and you can always add equal parts flour and stock to make a slurry and use to thicken soup before adding the broccoli. Because you need to cook the flour taste out for at least 10 minutes. While you are cooking your soup during the 10 minute period, you can shred your block of Cheddar Cheese. Lower the heat to medium and add the broccoli to the pot, and cook for about 5 minutes on a simmer. Do not overcook the broccoli. (Note: When cutting the broccoli you want some small and larger pieces and save some for garnishing the soup). Add 1 cup or more heavy cream. Add it slowly, a little at a time to temper the cream into the hot soup. Add 1 lb shredded Cheddar Cheese and ½ cup of grated Pecorino Romano Cheese. Taste the soup and adjust seasoning. You are done... Let’s Eat! Mozzarella Cheese (Whole Milk or Part-Skim) 2 Cups Canola or Vegetable Oil 4-6 Eggs 1 ½ cups Flour 1 ½ cups Italian Seasoned Bread Crumbs 1 ½ cups Italian Seasoned Panko 2 oz. Grated Pecorino Romano Cheesse 1 tbsp. Chopped Parsley Salt and Black Pepper to taste FRIED MOZZARELLA INSTRUCTIONS Sart by adding oil to a frying pan heat on low to medium heat and temp oil to 325-350 degrees F. Beat eggs in a bowl and in separate bowls or containers and add flour, bread crumbs, and panko. Slice Mozzarella block into ½ inch slices. Place sliced mozzarella in flour and shake well, place in eggwash and completely coat, place in bread crumbs and completely coat place back in the eggwash, completely coat and into panko… again completely coat. You can bread all at once and fry or you can bread them as you cook them. Place breaded mozzarella into the hot frying oil and cook 1-2 on each side until golden brown. To ensure the cheese is completely melted, you can place them in the oven for 5-10 at 350 degrees F. Place leafy greens on a plate and place Marinara Sauce in a small cup/bowl and place in the center of the plate. Place the Fried Mozzarella around the sauce. Top with S&P, chopped parsley, and pecorino romano cheese. You are done... Let’s Eat! Nice Job and Enjoy. 😊 MARINARA SAUCE INGREDIENTS 1 - San Marzano Tomatoes 28oz can 4 Cloves Garlic 2 oz. Chopped Parsley 2 oz. Chopped Basil 3 oz Extra Virgin Olive Oil Salt and Pepper to taste MARINARA INSTRUCTIONS Make the Marinara sauce by adding Extra Virgin Olive Oil and whole Garlic to a pot, and lightly brown garlic, remove and set aside. Add tomatoes, parsley, basil, chopped roasted garlic, salt, and pepper to the pot. Blend with a hand mixer if needed. Cook for 20-30 minutes on low heat. Paprika 1 tsp. Salt 1 tsp. Black Pepper 1 Lemon MARINARA SAUCE & SPAGHETTI INGREDIENTS 1 - San Marzano Tomatoes 28oz can 4 Cloves Garlic 2 oz. Chopped Parsley 2 oz. Chopped Basil 3 oz Extra Virgin Olive Oil Salt and Pepper to taste FRIED SHRIMP SPAGHETTI MARINARA INSTRUCTIONS Start by adding 1 tbsp. of Salt to pot water and place on stove for pasta. If Shrimp are frozen, place them in a bowl with water and defrost for 5 minutes, drains and fill again with water and let them sit for 5 more minutes and your shrimp should be defrosted. Make the Marinara sauce by adding Extra Virgin Olive Oil and whole Garlic to a pot, and lightly brown garlic, remove and set aside. Add tomatoes, parsley, basil, chopped roasted garlic, salt, and pepper to the pot. Blend with a hand mixer if needed. Cook for 20-30 minutes on low heat. Peel and clean Shrimp, and add some water to the bowl to coat all shrimp. Add flour to a bowl with Salt, Pepper, and Parikia. Before cooking the shrimp, cook pasta al dente, drain, and cool. You can heat up in a saute pan with the Marinara Sauce right before servicing. Add Canola oil to a pan or pot and heat up to 350 degrees F. Take about 10 shrimp that are coated in water and place them in the flour, shake off excess flour and add to hot oil, and cook for 1 ½ to 2 minutes or until crispy and brown. Place them on a sheet pan with a paper towel to absorb excess oil. Serve Shrimp with Spaghetti, topped with Marinara Sauce, Pecorino Romano Cheese, Parsley, and a side of lemon wedges for the shrimp. Flounder or Sole Fillet 1 Cup Clam Juice 4 Eggs ¼ Cup Dry White Wine Fresh Lemon Juice - ¼ Lemon 2 Cloves Garlic ½ Cup Chopped Arugula 2 oz. Chopped Parsley 1 ½ Dozen Cherry Tomatoes 3 oz. Butter 3 oz Extra Virgin Olive Oil 3 oz of Cornstarch and 3 oz. of Water for Slurry. Salt and Pepper to taste SAUTEED FLOUNDER FRANCESE STYLE INSTRUCTIONS Start by inspecting the Flounder for any bones by running your finger up and down the seam. Add 1 tsp. of Salt and 1 tsp. of Black Pepper the Flour. Beat Eggs and add some chopped parsley to the eggwash. In a saute pan add 1 oz. of Butter and 3 oz of Extra Virgin Olive Oil and heat up. While your butter and oil are heating up, dip the Flounder in the Flour and shake off excess flour and submerge in the eggwash mixture. Once your butter and oil are hot enough, add the Flounder to the pan and brown on both sides, about 2 minutes on each side, and remove from the pan and set aside. Be very gentle when handling the Flounder it is delicate flaky white fish and will break on you if you’re not careful. Use a spatula. After cooking all the Flounder drain the excess butter and oil from the pan and leave a little of the oil and add sliced garlic to the pan and lightly brown, Now you can deglaze the pan with White Wine. Add Clam Juice, Lemon Juice, 2 oz. of Butter, and 2 tbsp of Cornstarch and Water Slurry to help thicken Sauce, You may need more or less depending on how thick you would like the sauce. Add the Flounder back to the saute pan and cook for 1 minute, add tomatoes and 2 tsp. of parsley and cook for 2 minutes. You are done... Let’s Eat! Chicken Stock or Broth (maybe a little extra too) 12 oz. Marinara Sauce or Canned Tomatoes 4 oz. Pancetta - Diced 4 oz. Pecorino Romano Cheese (grated) ½ Medium Onion - Chopped 2 Stalks Celery - Chopped 1 Carrot - Chopped 2 garlic cloves - Chopped 2 oz. chopped parsley - Chopped 2 oz chopped fresh basil - Chopped 3 oz. Extra Virgin Olive Oil (additional salt and pepper to taste) 1 lb. Ditalini Pasta PASTA FAGIOLI INSTRUCTIONS Start by putting a pot of water on the stove for your pasta, and add 3 oz of salt to the water. Add Extra Virgin Olive Oil and Pancetta to another pot and render/cook pancetta until brown. While the pancetta is cooking you can chop your onions, celery, carrots, and garlic and add them to the pot after the pancetta is browned, and sweat the vegetables. Add Cannellini beans to the pot, you can rinse them first if you like, I use the syrup! Add Chicken Stock, Marinara Sauce, or Canned Tomatoes and Pecorino Romano Cheese. Add Chopped Basil and Parsley and season with Black Pepper. Wait until the very end to add any salt if needed. Cook your pasta as soon as the water starts to boil to time everything correctly. Add pasta to your pot if serving right away, if not add pasta as needed before serving. Place Pasta Fagioli in a bowl and top it with Fresh Chopped Parsley and Pecorino Romano Cheese. You are done... Let’s Eat! On Ya'Eat we specialize in Italian and Seafood Recipes but do so much more. www.YaEat.tv MEATBALL LOAF PARMESAN INGREDIENTS 1 ½ - 2 lb. ground meatloaf mix (beef, pork, and veal) 6 garlic cloves (roasted or sautéed) 4-6 oz. Italian seasoned breadcrumbs 2 slices white bread (cubed crust removed) 2-3 lg eggs 3 oz. water. 4 oz. pecorino romano cheese (grated) 1 lb. fresh mozzarella cheese 3 oz. chopped parsley 3 oz chopped fresh basil 1 tsp. oregano (optional) 1 tbsp. salt 1 tsp. black pepper (additional salt and pepper to taste) MEATBALL LOAF PARMESAN INSTRUCTIONS Start by making a marinara sauce, if you have at least a quart already you are good to go! Brown whole garlic cloves in extra virgin olive oil, remove and set aside. (if you are making sauce, cook garlic for both sauce and meatball mix. Remove crust from white bread and cut into cubes. Add eggs and water to a bowl and mix together. Add cubed bread and break down the bread with the egg mixture until smooth. Add, salt and pepper, pecorino romano cheese, chopped basil, parsley, and garlic, and mix together. Add meatloaf mix and blend well. Add breadcrumbs until you get a nice consistency. Not too dry and not too moist… Just right! This is the tricky part, and it comes with practice. Now you cannot eat raw ground meat and raw eggs, so make a little paddy, pan fry and taste it. You can adjust seasoning before you start the meatball loaf process. Now that you know that the meatball mix tastes really good, you can portion the meatball mixture by placing it in an 8 oz. cup and removing it from the cup and flattening it out on foil or parchment paper. Now you should have what looks like an 8 oz. 1 in thick burger paddy. Add 3 slices of fresh mozzarella cheese to the center, and fold in each side, and roll it like sushi, make sure you pinch the seams together. Use foil or paper to help tighten the loaf, just like a sushi roll. Coat saute pan with extra virgin olive oil and on medium heat and brown the meatball loaf on all sides. Place on a baking tray and into a preheated oven at 375 degrees F and bake for 10-15 minutes or until the internal temperature is 160-170 degrees F. Remove from oven and check the internal temperature. Coat a baking tray with some marinara sauce, place meatball loaf on top of the sauce, coat the meatball loaf with more sauce, and top with fresh mozzarella cheese and pecorino romano cheese and place back in the oven until the cheese melts. Serve with your choice of pasta. You are done... Nice Job and Enjoy. 😊 MARINARA SAUCE INGREDIENTS 2 28 oz. Cans Whole or Crushed Tomatoes. (San Marzano Preferred) 4 Cloves Garlic. ¼ cup Fresh Basil. ¼ cup Fresh Parsley. ¼ cup Extra Virgin Olive Oil. (EVOO) Salt and Pepper. (to taste) MARINARA SAUCE COOKING INSTRUCTIONS Start by peeling the garlic and try to leave it whole. Add Extra Virgin Olive Oil and Garlic to the pot, brown garlic, remove, and set aside. Add Tomatoes, Chopped Garlic, Chopped Basil, Chopped Parsley, and Salt, and Pepper to taste. If you have whole tomatoes, you will need to blend them down first or use a hand mixer. (Leave a little chunky) Cook for 30 minutes on a low simmer. Sir every ten minutes or so. You are done... Now add 3 cups of Bread Flour, and mix with your hands and push dough from the outside inward to the center. At Ya'Eat we specialize in Italian and Seafood Recipes but do so much more. www.YaEat.tv BROCCOLI RABE AND SAUSAGE SOUP INGREDIENTS 2 tablespoons extra-virgin olive oil. 1 1/2 pounds Italian bulk sweet sausage. 2 bunches or 6-8 cups chopped broccoli rabe. 1 cup pecorino romano cheese. 3 quarts chicken stock. 1 medium onion, chopped. 3/4 cup carrot, shredded or chopped. 2-4 cloves garlic, chopped. 1 bay leaf. 3 cans white beans, drained. Salt and pepper. 2 tbsp. Cornstarch. ½ cup water BROCCOLI RABE AND SAUSAGE SOUP COOKING INSTRUCTIONS Start cooking your pasta ahead of time. Add olive oil in a soup pot over medium-high heat. Add the sausage and brown, remove and set aside. Add Onion, Carrot, and bay leaf, season with salt and pepper. Cook mixture for 2-3 minutes to begin to soften the vegetables. Add the broccoli rabe and wilt down but don’t overcook. The broccoli rabe will reduce to half its size. Add stock and beans, and bring soup to a boil. Reduce heat to simmer and cook for 5 minutes. Combine cornstarch and water and slowly add to the soup and thicken to your liking. Shut off the heat and add Pecorino Romano Cheese and adjust seasonings if needed. Add cooked pasta to a bowl, add soup, and top with shredded carrot and grated cheese. You are done... Raw Calamari 2 Cups Flour 2 Tbsp. Paprika Canola Oil (enough to submerge the calamari while cooking) 1 Tbsp. Salt 1 Tbsp. Black Pepper. FRIED CALAMARI COOKING INSTRUCTIONS Start by defrosting if frozen, and cleaning the Calamari. I like to flip the tubes inside out and clean the inside too, but it is not necessary. After cleaning, cut them into ½ inch wide rings. Place back in the bowl and wash with cold water and ¼ cup of salt. Drain and add some water back to the bowl with the calamari. The trick is you need to keep the calamari moist as you add it to the flour. Add 2 cups of flour into a bowl along with 2 tbsp. of Paprika, 1 tbsp. Salt and 1 tbsp. Black Pepper and mix together. Add Canola Oil to your pot or fryer. The temp of the oil needs to be around 350 degrees Fahrenheit. Once your oil reaches 350 degrees, you can start to fry the calamari. Place calamari rings in a cup or bowl around 1-2 cups depending on how big the pot or fryer is that you are using. You can not overcrowd the calamari while frying or the flour will not stick. Make sure that the calamari is moist and add it to the flour mixture, coat well and shake off excess flour, add the calamari to the hot oil and give a light toss to make sure they are not sticking together. Cook for about 3-4 minutes and try one to make sure it is cooked and crunchy. Do not overcook or they will be like rubber bands. You are done... Nice Job and Enjoy. 😊 MARINARA SAUCE INGREDIENTS 2 28 oz. Cans Crushed Tomato. 2-4 Cloves Garlic. ¼ cup Fresh Basil. ¼ cup Fresh Parsley. ¼ cup Extra Virgin Olive Oil. (EVOO) Salt and Pepper. (to taste) MARINARA SAUCE COOKING INSTRUCTIONS Start by peeling the garlic and try to leave it whole. Add Extra Virgin Olive Oil and Garlic to the pot, brown garlic, remove, and set aside. Add Tomatoes, Chopped Basil, Chopped Parsley, and Salt, and Pepper to taste. Sir every ten minutes or so. Cook for 30 minutes on a low simmer. You are done... Fresh Basil. Fresh Parsley. ½ cup Pecorino Romano Cheese. Fresh or Dry Oregano. Extra Virgin Olive Oil. (EVOO) Salt and Pepper. FRESH TOMATO SAUCE COOKING INSTRUCTIONS Start by putting on a pot of water to blanch tomatoes. (add some salt to the water). Wash and prepare tomatoes to be blanched. Once the water is boiling you can add the whole tomatoes to the water carefully, and cook for 2-3 minutes or until the skin starts to split or crack. While the tomatoes are blanching you can peel and lightly crush or keep the garlic whole and set it aside. Drain tomatoes and try to keep the tomatoes in the pot and add cold water and repeat until you can handle the tomatoes without burning yourself. Fill the pot up one more time water and add some ice to the pot if you have, but will work without. You should be able to easily peel the skin right from the tomatoes and place them in a bowl. After peeling all of the tomatoes, remove the core and cut into smaller pieces like ¼ or ⅙. Add Extra Virgin Olive oil to a pot and brown the garlic, remove and set aside. Add all of your chopped-up tomatoes to the pot. Add, fresh chopped basil, parsley, and oregano (or dry oregano) Salt, and Pepper to taste. Add half of the garlic to the tomato sauce and cook for 15 minutes. Use a hand mixer to blend tomatoes to a consistency of your liking. (I like it on the chunkier side) and cook for 30 minutes. If your sauce gets too thick from reduction, you can add some water or if it is too watery, you can cook and reduce down some more. Adjust seasoning with Salt and Pepper. Chop up remaining garlic and cook on low heat with a little bit of Extra Virgin Olive Oil until they are crispy but not burnt and set aside. After cooking your pasta add to a bowl with some tomato sauce and pecorino romano cheese and toss together. Add some sauce to a plate and add pasta on top of the sauce and top it with more sauce, pecorino romano cheese, and top with garlic crumble and fresh parsley. You are done... Butter. Fresh Basil. Fresh Parsley. Teardrop or Cherry Tomatoes. Fresh Thyme. Extra Virgin Olive Oil. (EVOO) Salt and Pepper. 1-2 tbsp. Flour or Cornstarch Slurry. (Equal parts Flour or Cornstarch and Cold Water) Balsamic Glaze. (Optional) BACON-WRAPPED SHRIMP COOKING INSTRUCTIONS 1. Start by peeling and cleaning Shrimp. 2. Cut Bacon in ½ and wrapped each Shrimp with a ½ slice of Bacon. (wrap tightly) 3. Peel and slice Garlic and place on the side for now. The rest of the prep can be done while the Shrimp are cooking. 4. Add a little Extra Virgin Olive Oil and coat the saute pan and add Fresh Thyme and Shrimp. Cook, until Bacon is crispy on both sides (about 2 mins each side) on high heat and Thyme, is browned or seared. While the Shrimp is cooking you can chop, the Basil, and Parsley and cut Tomatoes in half. 5. Remove Shrimp, and Thyme from the pan and place them on the side and drain any excess Bacon oil/grease from the saute pan, and keep some oil, and add the garlic and lightly brown. 6. Deglaze pan with White Wine and cook for one minute. 7. Add Clam Juice, and then add Butter, ⅓ fresh Lemon Juice, and 1 tbsp of the Flour Slurry, mix well, and cook until sauce thickens. 8. Take some of the seared Thyme and add it back to the saute pan without the stem and save some on the stem for garnish. 9. Add Chopped Basil, Black Pepper, and Shrimp to the saute pan and cook for about 1 minute, shut off, add the Tomatoes, taste, and adjust seasoning. 10. Add Bacon-Wrapped Shrimp to the plate and garnish what lemon slice dipped in chopped parsley and top with the seared thyme. You are done...
