BACON-WRAPPED SHRIMP INGREDIENTS

  • Large Shrimp (16-20 or 21-25).

  • 8-10 Slices of Bacon.

  • 1/2 cup of White Wine.

  • 2- cups Clam Juice.

  • 2 Cloves Garlic.

  • 1 Lemon.

  • 2 oz. Butter.

  • Fresh Basil.

  • Fresh Parsley.

  • Teardrop or Cherry Tomatoes.

  • Fresh Thyme.

  • Extra Virgin Olive Oil. (EVOO)

  • Salt and Pepper.

  • 1-2 tbsp. Flour or Cornstarch Slurry. (Equal parts Flour or Cornstarch and Cold Water)

  • Balsamic Glaze. (Optional)

BACON-WRAPPED SHRIMP COOKING INSTRUCTIONS

  1. Start by peeling and cleaning Shrimp.

  2. Cut Bacon in ½ and wrapped each Shrimp with a ½ slice of Bacon. (wrap tightly)

  3. Peel and slice Garlic and place on the side for now. The rest of the prep can be done while the Shrimp are cooking.

  4. Add a little Extra Virgin Olive Oil and coat the saute pan and add Fresh Thyme and Shrimp. Cook, until Bacon is crispy on both sides (about 2 mins each side) on high heat and Thyme, is browned or seared. While the Shrimp is cooking you can chop, the Basil, and Parsley and cut Tomatoes in half.

  5. Remove Shrimp, and Thyme from the pan and place them on the side and drain any excess Bacon oil/grease from the saute pan, and keep some oil, and add the Garlic and lightly brown.

  6. Deglaze pan with White Wine and cook for one minute.

  7. Add Clam Juice, and then add Butter, ⅓ fresh Lemon Juice, and 1 tbsp of the Flour Slurry, mix well, and cook until sauce thickens.

  8. Take some of the seared Thyme and add it back to the saute pan without the stem and save some on the stem for garnish.

  9. Add Chopped Basil, Black Pepper, and Shrimp to the saute pan and cook for about 1 minute, shut off, add the Tomatoes, taste, and adjust seasoning.

  10. Add Bacon-Wrapped Shrimp to the plate and garnish what lemon slice dipped in chopped parsley and top with the seared thyme.
