BROCCOLI RABE AND SAUSAGE SOUP INGREDIENTS
2 tablespoons extra-virgin olive oil.
1 1/2 pounds Italian bulk sweet sausage.
2 bunches or 6-8 cups chopped broccoli rabe.
1 cup pecorino romano cheese.
3 quarts chicken stock.
1 medium onion, chopped.
3/4 cup carrot, shredded or chopped.
2-4 cloves garlic, chopped.
1 bay leaf.
3 cans white beans, drained.
Salt and pepper.
2 tbsp. Cornstarch.
½ cup water
BROCCOLI RABE AND SAUSAGE SOUP COOKING INSTRUCTIONS
Start cooking your pasta ahead of time.
Add olive oil in a soup pot over medium-high heat.
Add the sausage and brown, remove and set aside.
Add Onion, Carrot, and bay leaf, season with salt and pepper.
Cook mixture for 2-3 minutes to begin to soften the vegetables.
Add the broccoli rabe and wilt down but don’t over cook. The broccoli rabe will reduce to half its size.
Add stock and beans, and bring soup to a boil. Reduce heat to simmer and cook for 5 minutes.
Combine cornstarch and water and slowly add to the soup and thicken to your liking.
Shut off the heat and add Pecorino Romano Cheese and adjust seasonings if needed.
Add cooked pasta to a bowl, add soup and top with shredded carrot and grated cheese.
