JUMBO STUFFED SHRIMP INGREDIENTS

  • 1 1/2 lb. U4 or U6 Shrimp.

  • 1 lb. Backfin Crab Meat.

  • 2 Cups of Clam Juice.

  • 4 oz. White Wine.

  • 4 Cloves Garlic.

  • Extra Virgin Olive Oil.

  • 1 Lemon.

  • 2-3 tbsp. Olive Oil Mayonnaise.

  • 2 oz. Butter.

  • ½ cup Seasoned Bread Crumbs.

  • Fresh Parsley.

  • Oregano.

  • Smoked Paprika.

  • 1 tbsp. Flour for Slurry.

  • Salt and Pepper.

JUMBO STUFFED SHRIMP COOKING INSTRUCTIONS

  1. Start by peeling Garlic and placing them whole in a saute pan with extra virgin olive oil, brown and remove. Save garlic and oil for later.

  2. Peel, clean and butterfly shrimp.

  3. Make Stuffing… In a mixing bowl add Mayonnaise, ½ Fresh Lemon Juice, Smoked Paprika, Fresh Parsley, tbsp. EVOO, S&P, Oregano, mix together and add Crab Meat and mix together. Add a little bread crumbs. You do not want the crab stuff too dry or too moist. Add more mayo or EVOO if needed.

  4. Coat a baking pan with some clam juice, place shrimp tail and fan side up.

  5. Add stuffing mixture on top of the shrimp, sprinkle some bread crumbs on top and fan out the tail.

  6. Take remaining garlic, and chop it up and add to the sauté pan with flavored EVOO and brown the garlic. Once garlic is brown, add White Wine and cook for 30 seconds. Add remaining clam juice to the sauté pan.

  7. Add 1 ounce of butter and cook until butter melts.

  8. Ladle sauce over stuffed shrimp and place in the oven at 400 degree F for 15-20 minutes.

  9. While your shrimp are baking, you can put on a pot of water for pasta and finish your sauce.

  10. In the sauté pan with your remaining sauce, add 1 more ounce of butter, ¼ lemon juice wedge and take 1 tbsp. of flour and 3 oz. of water and make a slurry, mix well and add to sauce and cook for 10 minutes.

  11. Remove shrimp from the oven, add sauce from the baking pan to the sauté pan and incorporate with sauce.

  12. Drain Pasta and add to sauce and cook for 1 minute.

  13. Place Stuffed Shrimp on a plate with our pasta and ladle sauce on top of both and finish with fresh parsley.
