PIZZA DOUGH INGREDIENTS (Makes 2lbs of Dough) Video Recipe https://youtu.be/4-HY_sY-tHs 3 1/2 Cups 00 or Bread Flour

1 1/2 Cups Warm Water (90 -110 Degrees F) 1 Packet or 1 tsp Instant or Active Yeast 2 tsp. Extra Virgin Olive Oil 1 tsp. Salt

PIZZA DOUGH INSTRUCTIONS

  1. Add Warm Water to a bowl, add Yeast (check yeast expire date) and dilute in water, add salt, and oil.

  2. Now add 3 cups of Bread Flour, and mix with your hands and push dough from the outside inward to the center.

  3. At this point your Pizza Dough will be sticky, you will slowly add the last ½ cup of Bread Flour until you reach a bouncy consistency, and just at the point where the dough is no longer sticking to your hands.

  4. Portion dough and place in a container and cover at room temperature for 45 mins or until the dough rises about 50% if you are going to use it today. If you are pre-making dough put it directly in the refrigerator and use it within 3 days, the dough will rise in the refrigerator.

1 28 oz. Can San Marzano Plum Tomatoes

3-4 Whole Garlic Cloves

Extra Virgin Olive Oil

Fresh Basil

Salt and Pepper to taste

CHEESE AND SAUCE FILLING

Low-Moisture, Whole Milk Mozzarella

Pecorino Romano Cheese

Fresh Basil

Salt and Pepper

SAUSAGE AND PEPPERS FILLING

2 Cups Mini Sweet Peppers

1 Spanish Onion

2 oz. Extra Virgin Olive Oil

1 tsp. Pecorino Romano Cheese

3 tbsp. Marinara Sauce

Salt and Pepper

FRIED CALZONE “LA FRITA” INSTRUCTIONS

SAUSAGE AND PEPPER FILLING

  1. Start by peeling Garlic and placing them in a pan with Extra Virgin Olive Oil and brown Garlic.

  2. Add Sausage and brown, remove Garlic once they are brown, and place on the side for later.

  3. While your Sausage is cooking cut your Mini Sweet Peppers in half, remove the core, seeds, and wash.

  4. Cut Mini Sweet Peppers in half and into thin strips.

  5. Do the same with the Onion, but thin slides.

  6. When Sausage is cooked, turn off the heat and remove sausage from the pan.

  7. After cutting Mini Sweet Peppers and onions and chopping roasted Garlic, place all in the pan on medium flame and sauté until Mini Sweet Peppers are 70% cooked.

  8. Cut sausage into bite-size pieces and add to bowl with Pepper and Onions, Marinara, Pecorino Romano Cheese, Salt, and Pepper.

STUFF AND FRY CALZONES

  1. Portion dough into 3 portions and stuff dough.

  2. Fold-over flap and make 1/2 moon and seal at the seam.

  3. Press and indent seam with a fork to seal.

  4. Heat frying oil to 350 degrees in a pan and fry on each side until brown (about 2 mins each side)

  5. Place on a wire rack or paper towel to drain.

  6. If needed place in the oven for about 5 mins.

MOZZARELLA AND MARINARA FILLING

1 Cup Shredded Mozzarella

6-8 tbsp. Marinara Sauce

1 tbsp. Pecorino Romano Cheese

Fresh Basil

Salt and Pepper

MIX ALL INGREDIENTS IN A BOWL
