  • 1 Veal Chop

  • 1 cup All-Purpose Flour

  • 1 cup Italian Season Breadcrumbs.

  • 3 oz. Light Extra Virgin Olive Oil.

  • 1 oz. Canola Oil

  • 3 Eggs

  • 1 Clove Garlic Roasted

  • 2 tsp. Grated Pecorino Romano Cheese

  • 1 Tbsp. Chopped Fresh Parsley

  • Shaved Pecorino Romano Cheese

  • Balsamic Glaze

  • Salt & Pepper to taste.


  1. Leave Veal Chop on the counter for 30 minutes.

  2. Prepare the salad first and place it in the refrigerator until needed.

  3. Add about 3 oz. Light Extra Virgin Olive Oil and 1 oz. Canola Oil to the sauté pan.

  4. Add garlic for Egg wash and for Salad Dressing and lightly brown and remove and turn off the heat.

  5. Mix Eggs, Chopped Roasted Garlic, Chopped Parsley, Grated Pecorino Romano Cheese, Salt & Pepper and mix well, and place on the side for a moment.

  6. Make Salad Dressing and place it in the refrigerator.

  7. Place Veal Chop in a storage bag, and evenly pound out the Veal Chop.

  8. Remove any excess fat and give a light pound to even out.

  9. Grab the Veal Chop by the bone and completely coat in the flour and shake off excess flour.

  10. Submerge in egg wash mixture and then place in breadcrumbs and completely coat.

  11. Place the breaded Veal Chop into the hot oil and light brown on both sides for about 1-2 minutes each side. Place in oven for 5-10 mins at 400 degrees Fahrenheit.

  12. Remove Salad and dressing from the refrigerator and add 2-3 tablespoons of dressing, mix well and place it on the plate.

  13. Remove the Veal Chop from the oven and place it on the plate. Top Veal Chop and Salad with Shaved Pecorino Romano Cheese and Balsamic Glaze.

  • Salad Spring Mix

  • Red Onion

  • Cucumber

  • Campari Tomatoes

  • Teardrop Tomatoes

  • Roast Red Peppers

  • Kalamata Olives

  • Avocado

  • Fresh Mozzarella

  • Salt & Pepper to taste.


  • 6 oz. Light Extra Virgin Olive Oil.

  • 2 oz. Red Wine Vinegar.

  • 1 cup Fresh Basil.

  • 2 Cloves Garlic Roasted

  • ½ tsp. Salt.

  • ½ tsp. Fresh Ground Black Pepper.


Combine all ingredients in a blender and blend for 20-30 seconds and chill for 30 mins.
